Purin (Japanese Custard Pudding)

Purin is a Japanese custard pudding, similar to crème caramel or flan. A mixture of eggs, milk and sugar is poured into molds, steamed or baked until set, and served chilled, with caramel at the bottom. The name is said to be a Japanese rendering of the English word “pudding.”
The mixture is stirred gently so it doesn't foam, then strained before it's cooked. That's because leftover bubbles or too much heat leave tiny holes, known in Japanese as “su.” Like purin, you bring things together into one smooth whole, with no gaps.
