Macarons are French confections made by baking a batter of whipped egg whites (meringue) mixed with ground almonds and sugar. The familiar form, with two shells sandwiching a filling, is said to have caught on in Paris. One theory says the macaron originally came from Italy.
Before baking, the piped batter is left to dry for a while so a skin forms on the surface. That way the tops stay smooth, while a ruffled rim called the “pied” (foot) forms around the edge. Macarons keep better than fresh-cream cakes, so they're often boxed up and given as gifts.
Part of a macaron's charm is that shells and fillings in different colors and flavors can be combined into a whole lineup.
