Udon are thick noodles made from wheat flour, salt and water. Under Japan's labeling standards for machine-made dried noodles, those 1.7 mm thick or more are called udon. In one traditional method the dough is kneaded underfoot to bring out its chewy firmness, and udon served in hot broth is called kake udon.
