Champon is a noodle dish born in Nagasaki, a port city in southwestern Japan. It's said to have started in the Meiji era (1868 to 1912), when the owner of a Chinese restaurant came up with a cheap, nourishing meal for students from China living in the city. Pork, seafood, cabbage, bean sprouts and more are stir-fried, broth is poured in, and fairly thick noodles are simmered right along with them.
