Amazake made from rice koji — rice cultured with a mold used in Japanese cooking for things like miso and soy sauce — has “sake” in its name, but it isn't alcohol. Mix koji into cooked rice or rice porridge and keep it warm for several hours, and the koji turns the starch in the rice into sugars, making it sweet without any added sugar.
