Soy sauce is made by growing koji mold on steamed soybeans and roasted wheat, mixing it with salt water and letting it ferment for a long time. In the Edo period it was made in large amounts in Noda and Choshi, in what is now Chiba, and carried by river to Edo, today's Tokyo. Sushi chefs sometimes call it murasaki, “purple.”
