Onigiri Filling Quiz
Kombu (Simmered Kelp)
Like the savory depth that brings out every flavor around it, you blend quietly into any group.
The kombu in onigiri is kelp simmered down in soy sauce and sugar until it's sweet and savory, a style called tsukudani. The name is said to come from Tsukudajima, an island in old Edo, now Tokyo, where it was made. The taste known as umami, found in kombu broth, was identified by a Japanese scientist in the Meiji era.
In the same way, you would rather bring out the flavors around you than step forward and lead. You value time-honored ways, and whoever you team up with, you can adjust how you come across to suit them. In a conversation, your nods and well-timed comments keep things running smoothly.
Umami tastes stronger when combined with other umami. That's one reason broth made from kombu and bonito flakes together is so widely used. You, too, are at your best when paired with someone, and when you have to decide something alone, you can get stuck on where to start.
